Well, it’s been a little over a week since Thanksgiving. After spending such a wonderful holiday with family and friends, who’d have thunk that we would end up sick! We sure didn’t, not with all the merrymaking and delicious delicacies to be had. But here we are, sniffly, stuffy, sore throaty, and cough cough cough cough, COUGH COUGH, COUGH!!!
Good lord that’s a lot of coughing isn’t it, a bit much if you ask me, but that’s what a cold does to you. Regardless, our tummies still rumble meaning there is food to be made and recipes to be shared. Thankfully Mandy, bless her heart, has the perfect recipe for when you’re feeling cold, when you’ve got a cold, or if you just wanna feel warm and fuzzy inside. That recipe would be her Feel Better Chicken Poblano Soup. Now, let me tell you a little about it.

“Why Chicken Poblano Soup?”
You see, for most people at least, when you get sick the go-to soup is chicken noodle soup. I’ve honestly never been a fan of chicken noodle, or soup in general. For the most part with me, it’s a texture issue. There’s something about having a food that’s both liquid and solid that makes my mouth say ‘no way’. But I tell you what, all of Mandy’s soups *chef’s kiss* I cannot get enough of her creativity. But we’re not here to talk about how amazing Mandy is, it’s her soup we really care about (don’t tell her I said that).
So it was maybe two or three days into being sick. Friday rolls around, without even asking, Mandy pulls up with a car of groceries and tells me, “I’m going to make us chicken soup.”
To which I responded, “You know I hate chicken noodle soup, it’s so mushy.”
Mandy, still taking the groceries out of their bags, gives me the glare of a lifetime, “You think I would make us a simple soup like chicken noodle? Do you doubt me, Christopher?”
I turned my head to the side slightly, side-eyed and smiling nervously at her I say “What kind of surprises do you have in store for us sickies at the Nelson House?” (Because it wasn’t just Mandy and I that were sick, no, everyone. Everyone got something and it was miserable, but this soup was definitely a beacon of hope.)
Mandy, pulling out two peppers, with a smile on her face tells me, ” We’re going to have some Chicken Poblano Soup, hold the noodle. Now go get me the slow cooker, this has to cook all day.” As I walk away to get the slow cooker, a smile was already forming. I knew for a fact that this soup would bring a smile to my face and some warmth to my heart.
The Best Part?
The best part about this soup actually ties directly into being sick. As we mentioned, we used a slow cooker for Mandy’s Chicken Poblano Soup. If you have any familiarity with slow cookers, I’m sure that you know where this is going. This is 100% a set it and forget it recipe. And forget it we did.
There is next to no preparation for this soup. I mean who wants to be chopping, sautéing, boiling, let alone standing when they’re sick? Once you get everything into the slow cooker, cook on low for 5 hours. After that, take the chicken out and let it cool until you can touch it without burning yourself. Shred the chicken up with your hands or a knife into bite-sized pieces. (I snuck a bite of the chicken here and can say, the flavor will not disappoint.) Put your shredded chicken back into the cooker turning it from low to high for 1 more hour. After that pour yourself a bowl and let the Mandy Magic work.
Recipe: Chicken Poblano Soup
Feel Better Chicken Poblano Soup
Equipment
- Pressure Cooker
Ingredients
- 1.5 lbs Boneless skinless chicken breast
- 2 Poblano peppers
- 8 Garlic cloves
- 1 10oz can Corn
- 1 10oz can White beans
- 1 5oz can Green chilis
- 1 Lime Juiced
- 1 Tbsp Cumin
- 1 Tbsp Dried cilantro
- 1/2 tsp Complete brand seasoning
- 2 tsp Onion powder
- 1 tsp Garlic powder
- 2 Tbsp Cream Cheese Optional
- Salt & Pepper to taste
Instructions
- Dice your poblano peppers and onion, to about the same size as your beans. If you have small beans, dice your peppers to match them. Meeting the bean size is key. Then peel and dice your garlic to match (or mince if you prefer)
- If using prepared chicken broth, add directly to your crockpot. If preparing your chicken broth, be sure your bouillon dissolves completely before adding to your crockpot. Then add your veggies
- Add your canned beans, corn, chilies, and the juice of one lime. Add your seasonings and a whole lot of love (you're trying to heal your sick family)
- Slice chicken breasts into strips for even cooking and lay in a single layer in the crockpot
- Set crockpot to 5 hours on low. After the 5 hours, remove chicken and shred before returning it to the pot. Set on high for remaining 1 hour
- Optional – add as much or as little cream cheese as you'd like for a creamier soup base. If anyone in the house has post-nasal drip or a bad cough, leave out the cream cheese or add separately to individual bowls.

sick, we recommend making this with a side of
cornbread or Spanish rice, heck, why not both!
Having a little extra today means you don’t have
to make lunch tomorrow! Regarding the canned chilis, if you’re not a fan
of the can, 2 serrano peppers are a great
alternative. Know this though, by using fresh peppers
you’re introducing some extra spice. Chris & I
love the fresh pepper over canned but that’s a
personal preference.

While this post is a bit shorter than normal, we hope that the soup makes up in the dividends of flavor it provides. Being sick is not fun, so we wanted to be sure that a fitting recipe got put up. So if you’re reading this and not feeling good, if you’ve got a cold, or just having a bad day, make this recipe. I cannot tell you how these flavor layers are out of this world.
The soup begins with such a pronounced savory taste, complimented by the fresh peppers, then finishing with the tiniest bit of spice. And that spice is key, with just the right amount, you expand upon what was already near perfect. Not to mention that a bit of spice helps clear out the sinuses, if only for a little.
