It’s no secret that us folks here at Millennial Pen in Hand love our food, but what about a good brew? Well, do rabbits hop? Does the sun shine? DOES 2+2 EQUAL 4??? Heck yeah we like a good brew. But the keyword there is good. If any beer or pale ale did the job for us we wouldn’t bother going out to these wonderful establishments, but I digress. We are a bit bougie and prefer drinks that have a lil somethin’ somethin’ to them. Back in 2022 a placed called Quirk Works opened up but we never made the time to check it out, BOY was that a mistake!
Quirk Works is one of, if not, the most unique breweries we’ve had the pleasure of visiting. If you happen to be in the Danbury area of Connecticut with some free time, CHECK THIS PLACE OUT! You will not be disappointed and here’s why…

Quirk Works has the Works
Day in and day out, Mandy and I would drive past this place. Tucked away behind what used to be a NAPA auto parts store this gem lay hidden. We knew it was there, in fact, when their Facebook page made the big announcement that they were coming soon, we liked and followed immediately. We knew what a brewery was, but a blendery?!? What the heckin’ is that? So we did some research into what Quirk Works claimed to be.
Unfortunately, at the time, there was little to go off of other than a logo and a few update posts. But as the coming soon became sooner and eventually NOW OPEN, we learned what it meant to be both a brewer and a blender. You see, while most go by the book, not fixing what isn’t broken, Quirk Works is out there becoming the innovators of brewing. If you don’t believe me, just take a look at their massive drink menu:
If there’s one thing that we preach here on Millennial Pen in Hand it’s variety. We love that feeling of a plentiful menu full of treats we’ve never heard of or even dared to imagine. And that is exactly what Quirk Works delivers on! So being the options loving lunatics that we are, we both got a four 5oz sampler ☠️☠️☠️. Needless to say, we was a lil tipsy.
Our “Quirks” of Choice
In all seriousness we knew that we were going to get the sample from the start. We love variety and variety loves us, simple as that. Here are the drinks that we decided suited us best, go ahead have a peek they’re even numbered to match faces with names:

I won’t lie, a few of these have some whacky descriptions, but good lord! Happy Holidaze and Tropical Snowshake, THE BOMB! Blurred Transparency and Serene Chaos pure genius! The way that Quirk Works takes what I know as beer, then blends all of those flavors to make something with such pizazz. My taste buds will never be the same.
I did make one teensy mistake though. And this is completely a personal preference, so sprinkle a few grains of salt while reading. I’m not a fan of stouts, I ordered Insomniac’s Dream knowing this. While I still do not like stouts, I will say that it was a bold flavor, with a strong essence of coffee. And I drank it first…
By no means did drinking this one first ruin the experience of everything else, but I’ve been told to drink light to dark before. But you see, I like to venture out like this trying things I know I don’t like because I know someplace somewhere has a version that I DO like. Unfortunately, while strong in flavor and bold in taste, this stout is not what my mouth’s about. But that Baby Philosopher and Spontaneous Rhythm, they slap HARD!
Quirk Works Got Snacks Too…
Not only did we sample 8 different drinks, we had to try some food too, we had to! It would be a disgrace to our honor as official foodie gamers to not try food on one of our outings. Quirk Works really surprised us as most breweries/wineries/distilleries are lacking in the food department. Many tipsy trips felt unsatisfying munching on bags of stale chips or cheese that’s been sitting out. But Quirk Works, you came through yet again! On their website (that we highly recommend checking out) there is a list of delicious, high quality snackaroos. With so many to choose from we settled on two.
An oldy but a goodie pretzels are the classic beer food and since we’d never tried the food here before we thought it safe to get something we know. Don’t you get mad at us though, this wasn’t all we got!
Our other snack was love at first sight. All we needed to see was its name on the menu and bam, our eyes met and fate was sealed.
We got ourselves something super scrumptious, something so fantabulastic that just thinking about it makes me drool. Let me introduce to you: Buffalo Chicken WONTONS
These bad boys are out of this world! The shell on them is freshly fried and crispy to the touch. Even as time passed a satisfying crunch came with every bite we took! To top is off, every bite is full of chicken that’s coated in some of the best buffalo sauce I’ve had. And while I cannot confirm this myself, I’ve been told that their ranch is homemade and my my is is a dip worthy sauce. If you’re ever uncertain as to what snacks to treat yourself to at Quirk Works, this is by far the safest bet out there.
Our Favorite Part
We haven’t even given you our favorite part, here is a picture of the interior of Quirk Works.
I honestly know little about brewing, but with everything in the open, it’s just captivating. A nice clean facility with a beautiful mural, tables that are sleek and shining in a well lit room. But what truly sets the vibe is the art. While we were so caught up in enjoying the drinks it dawned on us that there were paintings along both walls. That’s not all, upon closer inspection these painting are for sale!!! Beautiful pieces of classic musicians like Jimi Hendrix and The Doors. These paintings range from small to super big (unconfirmed if those are for sale). Nonetheless, being here with friends or some family, it would definitely bring a smile to my face.
Unfortunately we were sippin’ the sauce a little too fast and slipped on getting a good picture of the art. So you’re going to have to do us, and Quirk Works, a solid. Go check them out for yourself 😉 experience this place like we did. Then tell us about it, we would love to hear what your experiences here have been like.
